INGREDIENTS
- 1 USA Bartlett pear, peeled and diced
- 3 cups unsweetened almond milk, divided
- 3/4 cup white chia seeds, divided
- 3/4 teaspoon pure almond extract, divided
- 3/4 cup white chocolate chips, divided
- 2.5 teaspoons matcha powder, divided
Optional
- 1 pear for garnishing
- Vegan white chocolate for garnishing
DIRECTIONS
- In a small saucepan, add 1 cup of almond milk, 1/4 cup of vegan white chocolate, 1/4 cup diced and peeled pear, and 1/4 tsp pure almond extract and bring to a low simmer (until all the white chocolate is melted).
- Transfer the mixture to a blender and blend until smooth
- Pour the white chocolate pear mixture and 1/4 cup of chia seeds to a glass bowl with a lid or mason jar, shake and then place in the fridge.
- Now you’re going to repeat this process two more times.
- In the same small saucepan, add 1 cup of almond milk, 1/4 cup of vegan white chocolate, 1/4 cup diced and peeled pear, and 1/4 tsp pure almond extract and bring to a low simmer (until all the white chocolate is melted). ** Also add in 1/2 tsp of matcha powder to this batch
- Transfer the mixture to a blender and blend until smooth. Pour this mixture to another glass bowl with lid or mason jar, add 1/4 cup of chia seeds, shake and then place in the fridge.
- Repeat a third time, this time adding 1.5 tsp of matcha powder to the saucepan, blend, pour into a third glass bowl with lid or mason jar, add 1/4 cup of chia seeds, shake, and add to the fridge with the other two.
- To assemble, spoon out some of each pudding and layer in glasses and top with fresh pear and additional white chocolate, if desired.
