INGREDIENTS
- 1 Red Anjou USA Pear, sliced thin
- 1 cup full-fat creamy ricotta cheese
- 2 teaspoons honey
- kosher salt, to taste
- 3 tablespoons extra virgin olive oil
- 1 crusty baguette, sliced into 1-inch thick crostini
- 3.5 ounces of thinly sliced prosciutto
- fresh basil, to garnish
- toasted pine nuts, to garnish
- red pepper flakes, to garnish
- flaked salt, to garnish
DIRECTIONS
- In a food processor, add the ricotta, honey & salt. with the motor running, slowly drizzle in the olive oil. continue mixing until light & fluffy, about 2 minutes.
- Transfer mixture to a piping bag & refrigerate until ready to assemble. just before serving the ricotta onto the crostini. Top with pear slices & prosciutto. Garnish with basil, pine nuts, chili flakes & flaked salt. serve immediately!
