INGREDIENTS
- 1 Anjou USA Pear, diced
- 1 tablespoon chopped jalapeno (can sub green or red pepper)
- 1 teaspoon chopped parsley (can sub cilantro)
- 1 tablespoon sliced scallions
- 1/2 tablespoon minced red onion (optional)
- 3 tablespoons fresh-squeezed lemon juice (can sub fresh orange or lime juice)
- 1 tablespoon honey
- 1/2 tablespoon olive or grapeseed oil
- Pinch salt & pepper
DIRECTIONS
- Combine pear, jalapeno, parsley, scallions and onion in a bowl.
- Combine lemon juice, honey, oil, salt and pepper in a small bowl and whisk until fully combined and emulsified.
- Pour it over the salsa, toss to combine and serve it over grilled chicken, grilled fish or chicken burgers. You can always add in pomegranate seeds or dried cranberries for a burst of flavor and color.
