Up your grilled chicken game with a simple pear Salsa. Add color, flavor, nutrients and texture easily.

INGREDIENTS

  • 1 Anjou USA Pear, diced
  • 1 tablespoon chopped jalapeno (can sub green or red pepper)
  • 1 teaspoon chopped parsley (can sub cilantro)
  • 1 tablespoon sliced scallions
  • 1/2 tablespoon minced red onion (optional)
  • 3 tablespoons fresh-squeezed lemon juice (can sub fresh orange or lime juice)
  • 1 tablespoon honey
  • 1/2 tablespoon olive or grapeseed oil
  • Pinch salt & pepper

DIRECTIONS

  1. Combine pear, jalapeno, parsley, scallions and onion in a bowl.
  2. Combine lemon juice, honey, oil, salt and pepper in a small bowl and whisk until fully combined and emulsified.
  3. Pour it over the salsa, toss to combine and serve it over grilled chicken, grilled fish or chicken burgers. You can always add in pomegranate seeds or dried cranberries for a burst of flavor and color.
