A refreshing pear salad that combines the flavor of pears with crunch from walnuts, creaminess from avocado and savory grilled chicken as a satisfying meal packed with bountiful goodness.

INGREDIENTS

Salad

  • 2 (Red Anjou and Green Bartlett) USA Pears, sliced
  • 6 cups spring blend salad greens or baby greens
  • 1 cup radicchio or red cabbage, chopped
  • 6 ounces grilled chicken breast
  • 2 ounces (~¼ cup) goat cheese crumbled
  • 2 tablespoons dried cranberries
  • 4 tablespoons walnuts, chopped
  • 1 whole medium avocado, diced

Maple Balsamic Dressing

  • ½ cup apple cider vinegar
  • ⅓ cup extra virgin olive oil
  • 1 teaspoon maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon minced garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon Italian seasoning blend

DIRECTIONS

  1. Prepare dressing by whisking together all ingredients in a small bowl or jar.
  2. In a large bowl, combine spring mix, pear slices, grilled chicken breast, bacon, goat cheese, dried cranberries, walnuts and avocado and toss with salad dressing. Serve and enjoy!
