INGREDIENTS
Salad
- 1 medium Bosc USA Pear, diced
- 1 head of romaine, chopped
- 1 small radicchio head, chopped
- 1/2 cup heirloom cherry tomatoes, halved
- 1 (14.5 oz) can chickpeas, rinsed and drained
- 2 tablespoons chopped fresh dill
Italian Dressing
- 1/4 cup red wine vinegar
- 1/4 extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon crushed red pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
DIRECTIONS
- In a large bowl, combine romaine, radicchio, cherry tomatoes, chickpeas, and pears.
- Prepare dressing by combining red wine vinegar, olive oil, mustard, garlic powder, crushed red pepper, oregano, salt, and pepper in a small bowl. Using a fork, whisk dressing until smooth and evenly combined.
- Pour dressing into the bowl with the salad ingredients, and toss until everything is evenly combined. Top with dill. Serve immediately.
