INGREDIENTS
- 1 fresh Anjou USA Pears, diced inch ¼-inch pieces (about 1 cup)
- 2 cups chicken breast, cooked, shredded
- 20 butter lettuce leaves
- 1/4 ripe large avocado, mashed
- 2 tablespoons plain Greek yogurt
- 2 tablespoons mayonnaise (or use plain yogurt as a substitute)
- 2 tablespoons chives, finely chopped + plus more for garnish
- 1 tablespoon lemon juice
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- ¼ cup walnuts, chopped
DIRECTIONS
- Dice pear into small pieces and set aside.
- In a large bowl, combine mashed avocado, Greek yogurt, and light mayo and stir until smooth. Add chives, lemon juice, salt, and black pepper and mix well.
- Fold in chicken, walnuts, and diced pears, and gently stir everything together until it’s evenly coated.
- Spoon a small amount of chicken salad into each lettuce cup and arrange on a platter. Serve immediately.
