Chicken Salad & Pear Lettuce Cups

Tender chicken, creamy avocado, crunchy walnuts and refreshingly sweet and tangy pears make these a lite and flavorful bite.

INGREDIENTS

  • 1 fresh Anjou USA Pears, diced inch ¼-inch pieces (about 1 cup)
  • 2 cups chicken breast, cooked, shredded
  • 20 butter lettuce leaves
  • 1/4 ripe large avocado, mashed
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons mayonnaise (or use plain yogurt as a substitute)
  • 2 tablespoons chives, finely chopped + plus more for garnish
  • 1 tablespoon lemon juice
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ cup walnuts, chopped

DIRECTIONS

  1. Dice pear into small pieces and set aside.
  2. In a large bowl, combine mashed avocado, Greek yogurt, and light mayo and stir until smooth. Add chives, lemon juice, salt, and black pepper and mix well.
  3. Fold in chicken, walnuts, and diced pears, and gently stir everything together until it’s evenly coated.
  4. Spoon a small amount of chicken salad into each lettuce cup and arrange on a platter. Serve immediately.
